Average Weight: 52.8 oz
If you love brisket, our cowboy-style short ribs deliver that same deep, slow-cooked satisfaction. Richly marbled and full of flavor, this cut is made for low-and-slow barbecue methods.
Cooked patiently, the meat becomes incredibly tender with a bold, beef-forward richness that makes short ribs a standout for special meals and weekend cooks.
Each cut of our beef is produced in small batches, making every piece naturally unique. Because each animal is individual, the size and shape of every cut may vary slightly; however, this variation has no impact on the cut’s overall quality, tenderness, or flavor.

All weights listed in our product descriptions are average weights only. Due to the natural variation of our cuts, no two pieces are identical — actual weight may vary slightly from that stated. We work hard to ensure every cut falls as close to the listed weight as possible, but as with all natural meat products, minor differences are to be expected. You will always receive the cut you ordered, and any variation in weight reflects the honest, natural character of our product.

Do you offer returns or refunds?
No. Our products are all perishable, they are all final sale. Under Civil Code 1723, we do not accept returns on perishable items.
What does certified natural mean?
Through a third-party program certification that we are part of- it means that we do not administer to our cattle any antimicrobials (Antibiotics, Antivirals, Antiprotozoals), growth hormones, or animal by-products of any means, ever.
Is every product from your herd?
Yes, every single calf, cow, heifer, and steer can be traced back for generations, since the first few cows were purchased back in 1995!
What is so sustainable about Martin Ranch Reserve packaging?
From the boxes it comes in, to the steak on your plate we have made our feed, practices, cattle, and even most of the shipping materials sustainable. The box itself is made out of recyclable materials, the gel packs can be reused, the insulation can go right down your drain!
